RED BEANS AND RICE 
1 ham bone
1 lb. dried red beans
1 lb. ham hocks or smoked or hot sausage
1 lg. onion
1 c. green onions, chopped
3 cloves garlic, chopped
1/4 c. parsley, chopped
2 bay leaves
1/4 c. butter
Salt
Cayenne pepper or Tabasco sauce

Bring beans to a boil for a couple of minutes, then let them soak in the same water overnight. In the morning, brown sausages or ham hocks to remove excess grease. Bring beans to a boil again and add all other ingredients. Reduce heat and simmer for at least 3 hours. Beans should become very creamy. Serve over hot, fluffy rice.
