STUFFED ZUCCHINI 
2 lbs. zucchini
1/2 lb. ground sausage
1/4 c. mayonnaise
2 tsp. dried onion
2 tsp. dried parsley
1/4 tsp. powdered oregano
1 tsp. salt
1 tsp. lemon juice
1/4 tsp. pepper
2/3 c. spaghetti sauce

Halve zucchini lengthwise. Scoop out centers leaving 1/4 inch shell. Place in shallow baking dish (microwave 10 minutes if desired). Coarsely chop centers, mix with next 8 ingredients. Spoon into shells, top with spaghetti sauce. Bake 350 degrees 30 to 45 minutes until shell is tender.

Since microwave ovens vary in power, you may need to adjust your cooking time.
