QUILTING PARTY SALAD 
2 sm. pkgs. strawberry gelatin
2 c. hot water
1 c. cold water
2 c. chopped bananas
1 c. chopped nuts
2 c. miniature marshmallows
1 lg. can crushed pineapple, drained (reserve juice)
1/2 c. reserved pineapple juice
1/4 c. flour
3/4 c. sugar
1 (8 oz.) pkg. cream cheese
1 sm. container Cool Whip
3 tbsp. coconut (optional)

Dissolve gelatin in hot water, then add cold water. Let partially jell. Add next 4 ingredients and let congeal until firm. Combine pineapple juice, sugar, and flour. Cook slowly until thickened, stirring constantly. Add cream cheese. Stir until smooth. Spread on top of congealed mixture. Top with a layer of Cool Whip. Add sprinkles of coconut.
