FRIED CATFISH | |
Catfish Grease Thermomet er Deep fry cooker Salt Meal, finely ground Flour Large catfish should be de - boned. Cut large portion of fillet into strips 5/8 inch thick. Leave bottom portion for frying. When fish is cut to liking salt and roll fish in 1 part flour to 2 parts meal. Bring grease to 350 degrees before dropping fish in. Most fillets will float when done. If frying whole fish fry until meat pulls away from bone at thickest point. When cooked, drain fish on thick paper (Publix paper bags). |
