FRIED RICOTTA 
1/2 lb. macaroons
1 lb. Ricotta
1/4 tsp. cinnamon
2 eggs
1 egg, lightly beaten
1 c. bread crumbs
1 c. butter

Mash macaroons very fine, add Ricotta, cinnamon and eggs and mix well. Shape into small balls, dip into beaten egg, roll in bread crumbs and fry in hot butter until golden brown. Serves 6.
