SEAFOOD CHOWDER | |
1 bay leaf 2 cloves garlic 1 tsp. salt 2 c. chopped onion 1/2 c. celery, sliced 1/2 med. green pepper, diced 3-4 carrots, sliced and pre-cooked 1/3 c. olive oil 1 (16 oz.) can tomatoes 1 (16 oz.) can tomato sauce or juice 2 tbsp. parsley, chopped 1 tsp. basil, crumbled 1 tsp. black pepper 2 c. chicken broth 1 lb. fresh shrimp 1/2 lb. scallops 1/4 - 1/2 lb. crab (or imitation crab) 1/2 lb. fish (orange roughey or any white fish) 1 c. dry white wine In large kettle, heat oil; saute onion, garlic, celery, green pepper, and precooked carrots. Stir in tomatoes and sauce and seasonings; simmer for 30-60 minutes. Add shrimp and scallops. Cook about 15 minutes. Add wine and crab meat. |
