HUMMINGBIRD CAKE 
Cake:

3 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 c. sugar
1 tsp. cinnamon
3 large eggs, lightly beaten
3/4 c. oil
1 - 1/2 tsp. vanilla
1 - 8 oz. can crushed pineapple and juice
1 c. chopped pecans
1 - 3/4 c. mashed bananas

Combine first five ingredients. Add eggs and oil, stirring until dry ingredients are moist. Stir in vanilla and next three ingredients. Pour into 3 greased and floured pans.

Bake at 350°F for 25 minutes. Cool completely.

Cream Cheese Frosting:

1/2 c. butter, softened
1 - 8 oz. pkg. cream cheese
1 - 16 oz. pkg. powdered sugar
1 tsp. vanilla

Spread frosting on cooled cake layers. For a unique look, top with silk rose petals.
