GRAPEFRUIT GELATIN 
2 med. grapefruit
2 tbsp. gelatin
1/2 c. cold water
1 c. sugar
2 tbsp. dry white wine
1 tbsp. lemon juice
Mint sprigs for garnish

Cut grapefruit in half crosswise. Combine juice from the grapefruit with enough water to make 2 cups.

Soak gelatin in water for 5 minutes. Dissolve over hot water until clear.

Add wine, sugar and gelatin to grapefruit juice, and put through a sieve. Chill in a bowl until slightly jelled. Pour into clean grapefruit shells, and chill until set.

Cut each half into 3 wedges, and garnish with mint sprig.
