OKRA PUFFS 
2 c. thinly sliced okra
1 tbsp. butter
1 c. flour
1/2 tsp. salt
2 tsp. baking powder
1 egg, beaten
1/2 c. light cream
Vegetable oil

Saute okra in butter until lightly brown. Sift flour, salt, and baking powder together and combine with egg and cream. Stir until smooth. Dip pieces of okra in mixture, then fry in hot fat. Makes 6 servings.
