PARADISE PIE | |
CRUST: 4 egg whites 1/2 tsp. cream of tartar 1 c. sugar 1/4 tsp. salt 1/2 tsp. vanilla Add cream of tartar, salt and vanilla to egg whites in large bowl and beat very stiff. Add sugar, 1 tablespoon at a time, beating constantly. Continue beating until very stiff, then heap in buttered 8 or 9 inch oven glass pie pan. Bake at 275 degrees for 1 hour. Let cool before spreading with topping. TOPPING: 1 can mandarin oranges, drained 1 banana, sliced 1/2 c. coconut 1 c. whipping cream 1 tbsp. sugar 1/2 tsp. vanilla Mix oranges, bananas and coconut. Whip cream stiff. Add sugar and vanilla. Spread a little whipped cream over the meringue. Cover with fruit mixture. Top with whipped cream and sprinkle coconut on top. Marilyn Rienstra's Mom |
