FRUIT PIZZA 
CRUST:

1 (20 oz.) pkg. cookie dough (refrigerated)

Or use a single batch of your favorite sugar cookie dough.

FILLING:

1 (8 oz.) pkg. light cream cheese, room temperature
1/3 c. sugar
1 tbsp. brandy
1/2 tsp. vanilla

TOPPING:

4 c. thinly sliced fruit (such as kiwi, strawberries & bananas)
1/2 c. apricot preserves
2 tbsp. brandy

Preheat oven to 375 degrees. Press dough into a prepared 14" pizza pan. Bake until puffed and golden, about 10 minutes. Cool completely.

Combine cream cheese, sugar, 1 tablespoon brandy and vanilla in bowl. Spread evenly over crust. Arrange fruit slices in circular pattern over cream cheese filling. Melt apricot preserves with 2 tablespoons brandy in small saucepan over low heat. Strain. Brush over fruit; chill 1 hour.
