CHOCOLATE ZUCCHINI CAKE 
1 pkg. white cake mix
1 tsp. ground cinnamon
3 eggs
3 level tbsp. cocoa
1 1/4 c. water
1/2 c. oil (preferably Crisco or Puritan)
1 c. shredded, unpeeled zucchini, squeezed almost dry

May add 3/4 cup chopped walnuts just before putting in greased and floured tube or bread pan. Combine dry cake mix, cinnamon, and cocoa until well blended. Mix eggs, water, and oil. Add to cake mix. Fold in raw zucchini and nuts, if desired. Bake at 350 degrees for 50-60 minutes.

No frosting is needed, although I sometimes sprinkle powdered sugar on a cooled cake.
