PASTITSIO 
1/4 c. olive oil
3-4 cloves garlic, minced
#2 1/2 can tomato sauce
1 sprig fresh oregano
Leaves, minced or 1 tsp. dried oregano
2-3 sprigs fresh parsley, minced
2 lbs. beef or lamb
1 c. chopped onion
1/2 tsp. cinnamon
1 1/2 c. grated Parmesan cheese
Pepper to taste

SAUCE:

1/2 cube of butter
4 tbsp. flour
2 beaten eggs
3 c. milk
1/2 c. Parmesan cheese
Dash of white pepper

Brown beef or lamb in Dutch oven until done. Add onion and garlic. Cook a little more. Add tomato sauce and spices. Let simmer for about 1/2 hour. Remove from heat and stir in the Parmesan cheese. Cook 1 pound cut zita pasta or large elbow according to package directions. Drain well.

Layer half the pasta in a large baking dish. Be sure to allow enough room. Top with meat mixture. Add remaining pasta. Set aside. Cover with saran and refrigerate until ready to make last layer.

In a saucepan, melt butter. Stir in flour and pepper. Add milk, all at once, and whisk until smooth. Cook and stir over medium heat until mixture is thick and bubbly. Stir some of the mixture into beaten egg, whisking well. Return egg mixture to saucepan. Cook and stir a little more. Stir in Parmesan cheese. Pour sauce over the top pasta layer. Sprinkle with additional cheese.

Bake at 350 degrees for at least 1 hour or until piping hot and a little golden on top. Let stand 10 minutes before serving.
