DIET EGGPLANT PARMESAN 
1 lg. eggplant
1 lb. skim mozzarella cheese, sliced or shredded
Spaghetti sauce or Marinara sauce, no sugar
Parmesan cheese

Peel and slice eggplant about 3/8 inch thick. Lightly oil 13 x 9 inch baking dish. Place single layer of eggplant in baking dish. Spoon sauce over eggplant slices. Top with desired amount of mozzarella cheese. Place second layer of eggplant on top and repeat sauce and cheese. Bake 3/4 hour at 350 degrees. Test for doneness. Increase oven time if needed.
