HOT FRUIT COMPOTE 
1 can dark pitted cherries
1 can (tall) chunky pineapple, natural juice
1 can mandarin oranges
6 tbsp. butter
1/4 c. brown sugar
1/2 tsp. vanilla
1/2 tsp. almond extract
Dash of cinnamon
3 tbsp. cornstarch

Drain fruits, reserving 3/4 to 1 cup pineapple juice. Put fruit in a casserole dish. Combine juice with other ingredients. Heat and cook until thick. Pour over fruit. Bake at 325 degrees for 45 minutes.
