APPLE BREAD PUDDING 
1 1/2 c. roughly chopped apples
1 1/2 c. apricot juice or nectar
2 egg yolks, beaten
2 tbsp. sugar
1/2 tsp. ground cinnamon
1 tsp. vanilla
2 1/2 c. bread cubes, using slightly stale bread
2 egg whites
2 tbsp. sugar

Mix together apples, apricot juice or nectar, egg yolks, sugar, cinnamon and vanilla. Add bread cubes and distribute evenly. Lightly grease an 8 inch square cake pan or baking dish of the same size. Add the apple mixture. Bake in a 350 degree oven for 15-20 minutes or until fruit is tender. Remove from oven.

For the meringue, beat the egg whites until soft peaks form. Add the sugar and beat until peaks become stiff. Put the meringue through a pastry tube and pipe a boarder all around the dish, leaving the center uncovered. You may also spoon the meringue around the pudding edge. Return to the oven and bake for about 10 minutes or until meringue is lightly browned.
