GOURMET CHEESY POTATOES 
6-9 med. potatoes
2 c. shredded Cheddar cheese
1/4 c. butter
1 1/2 c. sour cream
1/3 c. finely chopped onion
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter
Paprika

Cook potatoes in skin, peel, shred coarsely on a 4 sided grater. In saucepan over low heat combine 1/4 cup butter and shredded cheese. Stir until melted. Remove from heat.

Blend onions, sour cream, seasonings. Fold into potatoes and put in greased 2 quart casserole. Dot with 2 tablespoons butter. Sprinkle paprika. Bake in 350 degree oven 30 minutes or until heated thoroughly. Casserole may be prepared the day before. Sprinkle with paprika just before baking.
