TABOULEH 
2 c. Bulgar wheat

Soak wheat a minimum of 3 hours or overnight in water to cover. Squeeze out any excess water before proceeding with recipe.

3/4 c. olive oil
1/2 c. fresh lemon juice
1 clove mashed garlic

1 c. chopped scallion
2 c. chopped parsley
2 tomatoes, chopped
Salt, pepper
Mint and/or dill weed
1 can garbanzo beans, drained (optional)

Makes 2 quarts.
