BANANA BREAD 
1 c. sugar
1/2 c. butter, softened
2 eggs, beaten
1 1/2 c. unbleached flour
1 tsp. baking soda
1 tsp. salt
1 c. mashed bananas (very ripe)
1/2 c. sour cream
1 tsp. vanilla
1/2 c. chopped nuts (walnuts or pecans)

Cream butter and sugar; add eggs. Sift dry ingredients and combine with the butter mixture; blend well. Add bananas, sour cream, and vanilla; stir well. Add chopped nuts. Pour into well buttered 9 x 5 x 3 inch loaf pan or several smaller tea loaf pans. Bake 1 hour at 350 degrees.
