PERSIMMON COOKIES 
1 c. sugar
1 c. shortening
1 egg
1 tsp. baking soda
1 c. persimmon pulp
2 c. sifted flour
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. allspice
1 tsp. baking powder
1 c. chopped walnuts
1 c. raisins or chopped dates

Cream sugar and shortening; add egg and beat. Mix soda with persimmon pulp and add to shortening mixture; mix thoroughly. Sift flour, salt, baking powder, and spices together. Stir into creamed mixture. Add nuts and raisins or dates.

Drop by heaping tablespoon onto Teflon or greased baking sheet. Bake until golden brown 15-17 minutes at 350 degrees. Makes about 20 cake-like cookies.
