HONEY LEMON RHUBARB PIE 
4 c. rhubarb, cut into 1/2-inch pieces
1 1/4 c. sugar
6 tbsp. flour
2 tsp. lemon rind, grated
1/3 c. honey
1 pastry for 2 crust pie

Combine rhubarb, sugar, flour and lemon rind; mix well. Blend in honey. Put the pie crust in a pie pan and fill with mixture. Put top crust on and seal edges.

Bake at 450°F for 10 minutes. Reduce heat to 350°F and continue baking for 35 to 45 minutes.
