HERB BUTTER 
1/4 c. butter, softened
2 tbsp. finely minced fresh parsley
1 1/2 tsp. fresh basil
1 sm. clove garlic, minced
1 drop green food coloring (optional)

Cream butter until light and fluffy. Stir in parsley, basil, and garlic. Press mixture through a sieve. (Not all the herbs will press through.) Stir in food coloring, if desired. Makes 1/4 cup.
