FRESH AMARETTO FRUIT SALAD | |
1 qt. strawberries, hulled and halved 1 pt. blueberries 6 peaches, sliced 1 pineapple, cut into chunks 2 c. red, seedless grapes 2 c. green, seedless grapes 1 lb. bing cherries, pitted and stems removed 2 tbsp. honey 1/2 c. Amaretto 1 c. whipping cream, whipped until thick 16 oz. softened cream cheese 1/2 c. powdered sugar 2 tbsp. lemon juice 1 tbsp. lemon rind, grated 1/2 lb. bing cherries and 1/2 c. chopped almonds (for garnish) Serves 12. Very pretty served in crystal glasses. In large bowl, lightly toss first 7 ingredients. Mix honey and amaretto together and pour over fruit. Lightly toss again, cover, and refrigerate for 4 hours, mixing every half hour or so. Meanwhile, whip cream in small bowl and set aside. Beat cream cheese; add powdered sugar, lemon juice, and lemon rind. Stir whipped cream into the cheese mixture. Cover and refrigerate until serving time. Spoon fruit into serving glasses. Top with whipped cream, cheese mixture, and sprinkle with chopped almonds. Top with stemmed bing cherry. |
