3 chickens, quartered
Salt & pepper
1/2 c. butter, melted
1 (10 1/2 oz.) can consomme
1/2 c. sherry or vermouth
1 lg. can sliced mushrooms
2 pkgs. frozen artichokes

Season chicken quarters with salt and pepper and arrange in pan. Combine melted butter and consomme and pour over chicken. Bake at 325 degrees for 1 hour, basting every 15 minutes. Add sherry or vermouth and continue baking until done. Cook artichokes hearts according to package directions; drain water. In saucepan, heat together artichoke hearts, mushrooms and pan drippings until hot. Serve sauce over chicken. Goes great with rice.
