STUFFED PEPPERS 
Bell peppers (at least 6)
2 tbsp. butter
1 onion
1 lb. ground beef
2 peeled tomatoes
1 c. cooked rice
Salt & pepper to taste
Dice cheese

Saute onions in butter and add meat. Cook slowly until dried out. Add tomato and cook until juice is cooked out. Add rice and mix thoroughly. Add cheese last, if desired. Parboil bell peppers or leave raw (I always parboil mine). Stuff with the above mixture. At this point they can be frozen or baked at 350 degrees for approximately 40 minutes. Top with buttered bread crumbs before baking.
