CHINESE CHICKEN SALAD 
5 boned and skinned chicken breasts poach with 3-4 good size pieces of fresh ginger. Drain, chop and refrigerate chicken. Discard ginger.

SALAD:

1 1/2 heads lettuce
Big bunch green onions
2 pkg. sliced almonds
1 pkg. sesame seeds

DRESSING:

6 tbsp. sugar
1 tbsp. salt
3/4 tsp. pepper
6 tbsp. vinegar

Mix over heat until boiling then remove and cool. When cool add 3/4 cup oil and mix good. Combine chicken with salad and toss with dressing. Also add 1 large can chow mein noodles.
