ENCHILADAS 
1 to 2 cans enchilada sauce
1 dozen flour tortillas
1 1/2 lbs. ground beef
1/4 lb. chorizo (Mexican sausage)
Pinch of garlic salt
1/4 bag frozen hash browns
1/2 lb. Colby cheese
1/2 tsp. salt

Brown hamburger and choriza. Add hash browns, salt and garlic. Simmer 20 minutes and add shredded cheese. (Save 1/2 the cheese for the top of enchiladas.)

Warm enchiladas sauce and dip in sauce and then fry at 300 degrees in electric fry pan. Have enough oil in pan just to coat the pan. Fry just a couple of seconds on each side.

Put filling on one end lengthwise and roll up. When ready to serve, top with last half of cheese, lettuce, tomatoes, etc. (We like the cheese slightly melted in microwave.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
