VEGETABLE SCALLOP 
1 med. onion
1 pkg. scalloped potatoes
1 pkg. frozen vegetable mix
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. celery seed
1/2 c. grated process cheese
2 c. boiling water

Saute onion, thinly sliced, in butter. In a 1 quart casserole dish place scalloped potatoes and sprinkle envelope of sauce mix (from potato box) over potatoes. Stir in vegetables, thawed, onion, salt, pepper and celery seed. Add boiling water and mix well. Top with cheese. Bake 375 degrees, covered, for 40 minutes.
