TWIN OAKS SCALLOPS 
1 1/2 lbs. bay scallops
1 c. Ritz cracker crumbs
1/8 tsp. dry mustard
1/4 tsp. paprika
1 tsp. grated Parmesan cheese
1/4 c. melted butter

Mix dry ingredients together. Stir in half the melted butter. Mix half the crumb mixture with the scallops and mound in a casserole. Top with remaining crumbs and drizzle with remaining butter. Bake in a preheated 350 degree oven for 20-25 minutes. Serves 4.
