EVERY-READY MUFFINS 
1 (15 oz.) box Raisin Bran cereal (I use extra raisins)
3 c. granulated sugar
5 c. all purpose flour
2 tsp. salt
4 beaten eggs
1/2 c. melted butter (oil)
1 qt. buttermilk
5 tsp. baking soda
1 tbsp. pumpkin pie spice (I use cinnamon & nutmeg)
1/2 c. melted shortening (oil)
2 tbsp. vanilla
4 tbsp. oat bran (opt.) (add 1/3 c. milk)

Mix cereal, sugar, flour, soda, spices and salt. Add eggs, shortening, butter, vanilla and buttermilk. Mix well and store in covered container in refrigerator. Fill muffin tins 2/3 full, bake in preheated 400 degree oven for 15 to 20 minutes. Batter will keep in refrigerator 6 weeks, and make 60 muffins.
