FRESH CORN OYSTERS 
1 c. flour
1 tsp. baking powder
1 tsp. salt
1 egg, beaten
3 c. fresh corn (about 6 ears)
2 tbsp. milk
1 tbsp. butter, melted
Vegetable oil

Combine flour, baking powder and salt in a medium mixing bowl; mix well. Combine egg, corn, milk and butter; mix well. Stir into dry ingredients.

Drop by tablespoon into hot oil. Cook until golden brown, turning once. Drain on paper towels; serve hot. Yields about 2 dozen.
