SPINACH PIE 
1 deep dish frozen pie crust
1 (16 oz.) bag frozen spinach
1 med. onion, chopped
2 cloves garlic, chopped
1 tbsp. vegetable oil
3 eggs, beaten
1/2 c. grated Romano cheese
1/2 c. milk
1 c. shredded Mozzarella cheese (or enough to cover top of pie)

Put spinach in frying pan and heat until defrosted (low heat). Remove from heat and add garlic, onion, and oil. In separate bowl, combine eggs, cheese, and milk. When spinach mixture is cool, add egg mixture. Pour into frozen pie shell. Top with Mozzarella cheese. Bake at 350 degrees for 45-50 minutes. Let stand for 10 minutes before cutting.
