PORCUPINE MEATBALLS 
1 can tomato soup
1 lb. ground beef
1/4 c. uncooked rice
1 egg slightly beaten
1/8 c. minced onion
1 tsp. salt
2 tbsp. shortening
1 c. water

Mix 1/4 cup tomato soup with ground beef, rice, egg, onion and salt. Shape into balls about 1 1/2 inches in diameter. Brown in shortening. Blend in remaining soup and water. Simmer about 40 minutes or until rice is tender; stir occasionally. Yield: 4 servings.
