PORCUPINE MEATBALLS 
1 can tomato soup
1 lb. ground beef
1/4 c. uncooked rice
1 egg
1/4 c. minced onion
2 tbsp. parsley
2 tbsp. oil
1 garlic clove
1 c. water

Mix 1/4 cup tomato soup with ground beef, rice, egg, onion, parsley and a dash of salt. Shape into balls. Brown in oil and a garlic clove. Blend in remaining soup and 1 cup water. Cover and simmer for 40 minutes.
