SLIM ENCHILADAS | |
6 soft tortillas 1/4 lb. lean hamburger 4 tbsp. minced onion 1 tbsp. vinegar 1-2 tsp. chili powder 1/4 tsp. oregano 2 c. tomato juice 1 tsp. cumin seed or 1/2 tsp. ground cumin 1 c. water diced green pepper 2 tbsp. shredded cheese Brown hamburger; drain. Add onion and vinegar and stir until vinegar evaporates. Stir in spices and 1/4 cup of tomato juice and water combined. Stir until juice evaporates. Divide meat filling on tortillas and roll like crepes. Arrange in skillet. Pour on remaining juice. Add green pepper. Cover and simmer 10-15 minutes. Uncover and simmer until sauce is thick. Sprinkle with cheese. Serve with a dollop of sour cream on top (lowfat yogurt for fewer calories). |
