CHICKEN MOZZARELLA 
2 pkgs. boneless chicken breasts
Mozzarella cheese
1 1/2 sticks butter
1/2 tsp. sage
1 tbsp. parsley
1/8 tsp. thyme
1 tsp. rosemary
1/8 tsp. salt
Dash of pepper
1/4 c. white wine

Pound chicken until thin and cut lengthwise and across to make 4 pieces. Cut cheese into strips (approximately 1/4 inch thick and 2 inches long). Mix melted butter with all ingredients except wine. Brush inside of breasts with butter mixture, lay cheese on brushed side and roll up. Dip rolled breasts in egg and then in plain bread crumbs. Place in greased pan. Bake at 375 degrees for 1 hour. Baste first 30 minutes with butter mixture, then second 30 minutes with white wine. Serves 8.
