RASPBERRY BARS | |
1 c. sugar 1/2 c. sugar 2 egg yolks, well beaten 2 c. flour 1/2 tsp. baking powder 1 tbsp. lemon juice 1 tsp. lemon rind 1 c. raspberry jam Cream the butter and sugar. Add yolks. Sift the flour and the baking powder; add alternately with lemon juice and rind. Divide the dough into two balls. Line a jelly roll pan with 1/2 the dough. Spread with raspberry jam. Roll the other ball of dough into a thin square. Cut into strips 1/2 inch wide. Place them lattice fashion over the jam spread dough. Bake in a 400 degree oven for 25 minutes or until a light brown. Cut into bars 2 x 3 inches before completely cool. |
