MANDARIN TOSSED SALAD 
1 head Iceberg lettuce, torn into bite size pieces
2 c. celery, chopped
2 tbsp. fresh parsley, chopped (optional)
4 green onions with tops, sliced
2 (11 oz.) cans mandarin oranges, drained
1/2 c. almonds, slivered
1/4 c. butter

Combine lettuce, celery, parsley, onions, and oranges. Toast almonds in butter in 350 degree oven or in skillet on top of stove over medium heat until golden brown.

DRESSING:

1 tsp. salt
Pinch of pepper
1/4 c. sugar
1/4 c. tarragon vinegar
1/2 c. salad oil

Combine dressing ingredients, mixing well. Sprinkle almonds over top and serve with dressing.
