SAVOY CABBAGE SOUP 
3 tbsp. butter
1 onion, chopped fine
1/4 c. rice, uncooked
3-4 c. cabbage, coarsely shredded
2 c. beef, cooked & cubed
6-8 c. beef broth
Salt to taste
Pepper to taste
Cheese, grated (opt.)

1. Melt butter in large kettle. Add onion and cook until light brown. Add rice and cook 1 minute, stirring constantly. Add cabbage and cook for several minutes. Add beef and broth. Add salt and pepper. Simmer until rice is well cooked.

2. Serve with grated cheese in a side dish.
