BURIED TREASURE MUFFINS 
1 cup all-purpose flour
1/2 cup quick-cooking oats
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 egg
3/4 cup milk
1/4 cup vegetable oil
3/4 cup fresh blueberries
butter (1 tsp. per muffin)

Preheat oven to 400°F. Put paper muffin cups inside muffin pans.

Mix together flour, quick-cooking oats, sugar, baking powder and salt. Dig a hole in the middle. In another bowl, break the egg and mix it with milk and oil. Add liquid mixture to dry mixture and stir. Fill muffin cup half way; then put teaspoon of blueberries in the middle and then a teaspoon more of butter.

Bake at 400°F for 20 to 25 minutes.

Makes 18 to 20 muffins.
