SHRIMP ETOUFFEE | |
1/2 c. chopped onions 1 1/2 tbsp. minced garlic 2 tbsp. olive oil 1 1/2 lb. can Italian plum tomatoes with paste 1/2 tsp. salt 1/4 tsp. pepper 1/4 c. sliced scallions 1 stick butter 1/4 tsp. marjoram 1/4 tsp. thyme 1/4 tsp. salt 1/4 tsp. crushed red pepper (optional) 1 1/2 lbs. shrimp (can use frozen, but needs thawing) In a heavy pan, saute onions and garlic in olive oil. Add tomatoes, salt and pepper; simmer uncovered about 30 minutes. Add the scallions, butter, marjoram, thyme, salt and pepper to pan and simmer for 15 minutes with lid tightly covered. Add shrimp and simmer for 2 minutes. Serve over UNCLE BEN'S® long grain and wild rice. Makes four servings. |
