SHRIMP FRIED RICE 
4-5 c. already cooked cold rice
5 strips bacon (cut into 1/4 inch pieces)
1 onion, chopped
1/2 lb. shrimp, shelled (chop if desired)
1 egg, beaten
Soy sauce
Scallions (chopped), optional

In hot greased wok, fry bacon until done but still tender. Remove from wok. Saute onion until golden; remove. Stir fry shrimp only until they begin to turn white. Remove.

Heat rice and 2 tablespoons soy sauce (more if desired) for 5 minutes on low heat. Stir in bacon, onion, egg and shrimp and cook for 1 minute. Salt to taste. Garnish with chopped scallions as desired. Yield: 4 large servings.
