ERIN'S EASY ZUCCHINI PIE 
1 pie shell
3 eggs
1 (8 oz.) sour cream
1/2 lb. cheese (hard cheese, not American or grated)
1 lg. zucchini, steamed
Salt & pepper to taste

Heat the pie shell at 400 degrees for 10 minutes. Place the zucchini and 1/2 of hard cheese in the shell. Blend the eggs, cream and remainder of cheese and seasoning. Pour into shell. Bake at 400 degrees for 40 minutes.
