POOR MAN'S STEW 
5 med. potatoes
3 med. onion
Both peeled & diced
Dash of salt for cooking
1/2-3/4 lb. salt pork, diced
Enough flour to thicken

Boil potatoes and onions until done. Fry diced pork until crisp. Put flour in clean, dry frying pan and brown it. Then mix browned flour with a little water to thicken. Slowly stir flour and water mixture into the cooked potatoes, onions and water they were cooked in. Thicken as desired. Add salt pork. Add some of the fat for flavor; do not add all the fat. Serve with bread, pickles, hot peppers or any condiments desired.
