SWEET POTATO BISCUITS 
1 lg. sweet potato
2 eggs
1/2 c. sugar
2 tbsp. softened butter
3 tbsp. shortening
1 tsp. salt
4 tsp. baking powder
2 c. all purpose flour

Boil sweet potato in water until soft. Drain it, cool it, peel it and mash it. In large mixing bowl, beat eggs and sugar. Add 1 cup mashed sweet potato and mix well. Taste for sweetness. Then add and mix remaining ingredients. Preheat oven to 350 degrees. Flour hands and counter top and knead dough lightly 3 to 4 times. Roll to 1/4 inch thickness. Cut with 2 inch cutter, place on ungreased baking sheet and bake at 350 degrees for 15 minutes.
