PEPPER STEAK 
1 lb. beef, (Round or Sirloin)
1/4 c. soy sauce
2 med. onions, cut in strips
2 tbsp. cornstarch
2 tbsp. shortening
1 1/2 c. water
1 Bell pepper, cut in strips
Fluffy rice

Cut steak into small strips. Brown in shortening about 5 minutes or until tender. Add soy sauce and water. Simmer for 10 minutes or more. Add Bell pepper and simmer a few minutes, then onion and cook until tender. May need to add more water. Thicken with cornstarch and serve over rice. Delicious!
