BLUE RIBBON CHICKEN - MICROWAVE | |
4 boneless, skinless chicken halves (about 4 oz. each) 2 (1 oz.) slices cooked ham 2 slices Jarlsberg, Muenster, or other cheese (about 1 oz. each) 2 tbsp. seasoned dried bread crumbs 1/2 tsp. paprika 2 tbsp. butter, melted 1. To form a pocket, cut each chicken breast half horizontally almost but not all the way through. Cut each ham and cheese slice lengthwise in half. Place a slice of ham and cheese in each pocket. 2. Combine bread crumbs and paprika. Brush chicken with melted butter, then coat with crumbs. In 12x8 inch baking dish, arrange chicken with meatier portions toward edges of dish. Cook, covered with waxed paper, in microwave on High 7 to 9 minutes until juices run clear when chicken is tested with a knife; rotate dish halfway through cooking. Makes 4 servings. May require 2 to 4 minutes longer cooking time, depending on microwave. |
