CHICKEN COUNTRY CAPTAIN 
1 (5 lb.) cooked chicken
1 pt. chicken broth
3 chopped green peppers
Garlic to taste
2 lg. chopped onions
1 lg. can tomatoes
1/2 c. catsup
Salt and pepper to taste
1 tsp. thyme
1 tsp. curry (more if you like)
1/2 c. almonds
1 c. fresh or canned mushrooms
1/2 c. chicken fat

Saute peppers, onion, garlic in chicken fat. Add tomatoes, catsup, curry, mushrooms, thyme, salt and pepper. Add chicken broth. Cook slowly for 1 hour. Add almonds and chopped chicken. Heat well. Garnish with thyme and nuts. Serve over rice. Enjoy!
