LOW CAL BLUEBERRY JAM 
4 c. blueberries
1/4 c. sugar or sugar substitute
1 env. unflavored gelatin
1/4 tsp. orange peel, grated
1/4 c. orange juice

In medium saucepan combine berries, sugar and orange peel. Beat 5 minutes, crushing berries slightly. Boil rapidly for 1 minute.

In small bowl, sprinkle unflavored gelatin over orange juice. Let stand 1 minute. Add to berry mixture and heat, stirring until gelatin is dissolved (3 minutes). Let jam stand 5 minutes. Skim off foam. Cover and cool slightly. Refrigerate. Makes 4 cups.
