CHICKEN AND BROCCOLI | |
4 chicken breasts, boneless and skinless 2 boxes frozen broccoli 1 can cream of chicken or celery soup 1 c. mayonnaise 1 tbsp. lemon juice 2 tbsp. butter 1 c. bread crumbs (or crushed potato chips can be substituted for butter and crumbs) 1 pkg. shredded Cheddar cheese Boil chicken. In a 9 x 13 inch glass dish, layer frozen broccoli, unthawed. Lay the cooked chicken breasts on top of broccoli. Mix together the soup, mayonnaise, and lemon juice; pour over chicken. Melt butter and mix with bread crumbs and spread over chicken. Sprinkle with cheese. Bake at 350 degrees for 30 minutes. Note: Can be kept in refrigerator overnight before baking. |
